Statement of Attainment in Food Safety (Supervision)

This course is for people who want to develop food safety programs. You will learn how to plan and implement a food safety program based on HACCP (Hazard Analysis Critical Control Point) principles.

You will learn how to map production flows for a variety of menu items; develop knowledge of legislation, food standards and industry codes; incorporate the principles of HACCP; and determine training needs for employees to implement the food safety program.

Food safety programs can be applied in clubs, pubs, hotels, aged care and health care facilities, canteens, catering organisations and retail food organisations. You will be required to develop a food safety program as a major project.

Career Opportunities: Cook, chef, catering supervisor, food and beverage supervisor.

Articulation: When you finish this course you may apply for advanced standing in a range of hospitality qualifications.

Entry Requirements: NSW School Certificate (or equivalent, from another educational authority) and recent experience implementing food safety procedures based on the Hazard Analysis Critical Control Point (HACCP) principles.
